The Atlantic redfish is an iconic bottom-dwelling fish species from the Gulf of St. Lawrence that is making a comeback in the waters of our majestic river. What a wonderful opportunity for Chasse-Marée to continue its mission of promoting the riches of the St. Lawrence.

Enhanced with a light, neutral, golden sunflower oil, this recipe highlights the fish and allows it to fully express all its flavors. This delicious recipe subtly combines the finesse of redfish with the salty flavors of Gaspésie seaweed. This preserve is the result of a collaboration between Chasse-Marée and the company Un Océan de Saveurs , which carefully selects and hand-picks the finest seaweed from Gaspésie. Prepared and canned by hand after careful seasoning, this redfish preserved in a quality oil will bring all the flavors of the sea to your taste buds or to your culinary preparations.

The Chasse-marée company, the team...

Since 2016, the duo Emmanuel Sandt-Duguay and Guillaume Werstink have been dreaming in blue, the color of the horizon line drawn by the Saint Lawrence near Rimouski. Driven by their mission to promote the river's little-known species, they founded Chasse-Marée , an artisanal cannery that promotes a local food pantry. Bringing quality, local seafood back to the tables of Quebecers is at the heart of their daily lives.

Chasse-Marée ventures into tackling undervalued meats. Emmanuel and Guillaume are convinced that by offering a product of pleasure, ready to be tasted and of perfect simplicity, they will succeed in revealing the gourmet appeal of unexplored marine products that still hold many surprises for your taste buds.

In each of Chasse-marée's preserves , the flesh of whelks (also called whelks) is enhanced in flavor by different recipes, all developed from the rich tastes of our Quebec nature, as well as by distinguished chefs passionate about local seafood such as Pierre-Olivier Ferry , Colombe St-Pierre and Tommy Roy . In all simplicity, each of our recipes contains few ingredients, but these have been meticulously chosen for their culinary quality, their naturalness and their proximity.
