Boreal Simple Syrup with Sea Lettuce

Whether you prefer it as a mocktail or a cocktail, this syrup with its aromas of our land will surely infuse your palate with the flavors of our history. Simply add 2 oz of this nectar to 8 oz of your favorite sparkling water or tonic water, and top it off, if desired, with 2 oz of Quebec gin. Cheers! A recipe by Dorothée L'épicurienne

  • 5 g juniper berries
  • 10 g of Sea Lettuce Flakes An Ocean of Flavors
  • 3 tbsp Labrador tea (chopped)
  • 4 g lemon verbena or the zest of one organic lemon
  • 1 cup of water
  • 1 cup dark maple syrup
  1. In a mortar or spice grinder, grind the juniper berries into grains.

  2. Add the sea lettuce , Labrador tea, and lemon verbena (or lemon zest). Mash the mixture well to blend the flavors. Set aside.

  3. Place the water and maple syrup in a pot and bring to a boil.

  4. Add the spice mix, cover and remove from heat.

  5. Let it steep for 1 hour 15 minutes. Strain through a small strainer and store in a glass container in the refrigerator.

The syrup can be kept for 1 week in the refrigerator.
