Royal Kombu Coleslaw

Revisit a classic by adding original flavors and textures
- 35 g Whole Royal Kombu An Ocean of Flavors
- 150 g green cabbage
- 150 g red cabbage
- 150 g grated carrots
- 100 ml vinegar
- 60 g brown sugar
Rehydrate the royal kombu for 1 hour in lukewarm water
Chop the green cabbage and red cabbage
Chop the royal kombu
In a bowl, mix the royal kombu, cabbages and carrots
Add the vinegar and brown sugar and mix
Season to taste
For a more indulgent version, add bacon
