Zucchini and Kombu Bread

Squash and Kombu Bread

Ah! That wonderful smell of warm zucchini bread when you arrive at Mamou's... alone or with butter, this bread will leave no one indifferent!
Dry ingredients
- 3 cups flour
- 1 tsp salt
- ¾ tsp. soda
- 2 tsp baking powder
- 3 tbsp Kombu flakes from An Ocean of Flavors
- 1 tsp cinnamon (optional)
Wet ingredients
- 8 oz cream cheese
- 3 eggs
- 1½-2 cups sugar or brown sugar (to taste)
- 2 cups zucchini (grated with skin)
- 1 tsp vanilla or sweet clover essence
- ⅔ cup vegetable oil
- 1/4 cup chopped walnuts (optional)

Preheat oven to 350°F
In a large bowl, mix the dry ingredients.
In a medium bowl, combine the wet ingredients.
Add the wet ingredient mixture to the dry ingredient mixture, alternating with the oil.
Add the nuts and mix (optional).
Pour into 2 ungreased loaf pans.
Bake for about 45 minutes or until a toothpick inserted comes out clean.
Enjoy for lunch, as a snack or for dessert.
Freezes very well if you want to have a loaf in reserve for next time!
