Vegetable, Cheese and Fisherman's Seaweed Pancakes

This recipe is credited to the imagination of Émilie and Antoine! Not sure what to do with last night's brunch crepes? Here's an easy, quick, and healthy recipe idea to reinvent your breakfast!
- a little butter, margarine or oil
- vegetables of your choice (carrots, peppers, celery, cauliflower, broccoli, onions, mushrooms, etc.) (diced)
- 1 pancake
- ¼ cup Le fin Renard cheese (or any other cheese you have on hand) (grated)
- 1 tbsp. of An Ocean of Flavors Fisherman's Blend flakes
Preheat oven to 400°F.
Sauté the vegetables in the fat of your choice.

Place the crepe on a baking sheet.
Place the roasted vegetables on one half of the crepe, cover with grated cheese and sprinkle with Fisherman's Mix flakes.
Fold the crepe in half and bake for 5 to 10 minutes, just enough to melt the cheese and toast the crepe to your liking.
