Vegetable Bowl with Sea Bacon Sauce

For the sauce
- ⅓ cup veganaise (vegan mayonnaise)
- 3 tbsp hot water
- 2 tbsp fresh ginger
- 2 tbsp. of Sea Bacon Flakes An Ocean of Flavors
- 1 tbsp Sriracha sauce
- 1 tbsp maple syrup
- 2 sweet potatoes (cut into cubes)
- 1 clove garlic (minced)
- nutritional yeast (to taste)
- salt and pepper (to taste)
- canola oil
Ingredients for the bowl (the choice of vegetables can vary according to your preferences)
- purple beans
- corn kernels (steamed)
- broccoli florets (blanched)
- cucumber (cut into slices)
- yellow cherry tomatoes
- dried tomatoes
- ¼ red bell pepper (diced)
- ¼ cup cooled cooked rice (optional)
Preheat oven to 425°F.
Mix all the ingredients for the sauce and bake for 25 minutes.
Arrange the rice (optional) and vegetables in a bowl.
Add sweet potatoes to sauce to taste.
