Healthy sesame and seaweed cookies

Lovers of sweet and savory dishes will be delighted with this recipe from Juliette's Recipes logbook. Enjoy it at any time of the day...or night!

  • ⅔ cup all-purpose flour (80g)
  • 2-3 tbsp rapadura sugar or powdered cane sugar (30g)
  • 3 tbsp almond powder (20g)
  • 1 tbsp. of Seaweed Fisherman's Mix from An Ocean of Flavors
  • 2 tbsp sesame seeds
  • ⅕ cup sesame butter (tahini)
  • 1 egg
  1. Preheat oven to 350°F.

  2. Immerse the seaweed in water for a few seconds to rehydrate and drain it.

  3. In a bowl, mix the flour, sugar, almond powder and seaweed.

  4. Add the sesame butter and egg.

  5. Knead with your fingertips to form a ball of dough. Don't hesitate to add a little flour if the dough sticks to your fingers.

  6. Roll out the dough on a floured work surface (it should be about ½ cm thick)

  7. Using a cookie cutter, cut out the cookies and place them on a baking sheet lined with parchment paper.

  8. Bake for 10 to 15 minutes (the cookies should still be a little soft; they will harden as they cool).

  9. Allow to cool before enjoying.
