The company Un Océan de saveurs nominated for a provincial award
The company Un océan de saveurs from Cap-aux-Os is a finalist in the “Producer of the Year” category of the Lauriers de la gastronomie, whose mission is to promote Quebec artisans.
Since 2011, professional diver and general manager, Antoine Nicolas, has been freediving off the tip of the Gaspé Peninsula to collect around fifteen species of algae.
His company specializes in the harvesting, processing and education of this marine food.
He mentions that the Gaspé seabed ecosystem is among those world-renowned for its environmental quality. For Antoine Nicolas, his company's priority is to be eco-responsible in order to preserve the resource for future years.
The products of an ocean of flavors are distributed mainly to restaurateurs, but also to consumers of local flavors.
Antoine Nicolas claims that some harvested algae contain 30 to 50% protein, which is good for health:
He points out that demand for his products is constantly growing. Currently, his products are sold at 250 to 300 points of sale throughout Quebec and are even shipped worldwide.
Three other Gaspésie businesses are also nominated for the Lauriers de la gastronomie québécoise awards: Maison du Pêcheur in Percé, Brasserie Auval in Val d'Espoir and Couleur chocolat in Ste-Anne-des-Monts.
